Drew Worm and Sweet Potato Fries

{What we did Wednesday} 


I'm sure you can guess which worm found this apple ;)


Wow, God proves his greatness again! Only the ultimate artist could create such massive, beautiful, slow-falling snowflakes as the sun was breaking through the clouds on this January day. It was beyond beautiful. It was nice to finally see some snow!


Great-Grandma says, "Hi" :) We brought over some more storage items and looked through all of her birthday cards. Her birthday was January 26th, and she turned 83!


She gave us some of the best-tasting cantaloupe I've ever had in my life. After baby, spilled cantaloupe juice on the floor, he kicked back in the chair for the first time and fell hard on the floor. He cried pretty badly, but was smiling and opening cabinets again within a minute.


Jr. got a scrambled egg.


For dinner, we had grilled cheese with caramelized onions and swiss chard on Ezekiel bread, along with sweet potato fries and steamed green beans.


On Sunday, Andrew's mom asked if we wanted a bag of organic sweet potatoes she found on clearance for $1. Yes please! :)



It was my first time ever cooking sweet potatoes. Aren't the colors beautiful?! As Andrew was leaving for work this morning, I told him we'd be having sweet potatoes for dinner and he told me he wouldn't touch them. He hates sweet potatoes. But I was determined to change his mind about them.


I didn't get a real good picture of the fries, but in my opinion, they tasted better and better after each sweet, savory, crunchy bite. Andrew isn't a sweet potato fan though...he ate 5 fries and said they were okay. {So much for touching them ;) } I give him credit for trying them out though and I haven't lost hope in him. I shall keep trying.

Wednesday, January 30

Day of Dancing and Laughing

{What we did Tuesday}

Baby and I spent most of the day moving around the apartment laughing, dancing, and working out. It was so cute because he followed me around kicking his legs up. It was such a fun day! I think we laughed more than we've ever laughed together in an entire day.


It took me a while to realize his crying and whining meant he was hungry. I'm still getting used to him eating all the time now. It's time to create a food schedule for him now :) After having a peanut butter and jelly sandwich with zucchini for lunch, he was very happy.


He had fun playing with his car seat. He's trying to figure out how we lock him in.




On our way to church for our 4-week class on learning how to read/understand the bible. It was so rainy and foggy, but we all made it safely. Andrew was able to attend this week right after work, so that was nice :)

Aunt Valerie held baby before our class started. 


Grandma volunteered to help with the nursery during our class at church. When Andrew and I came back to get him, we found out he ran to give his friend Benjamin a hug and accidentally clobbered him. Poor Benjamin fell to the hard floor, leaving a bump on his head. Andrew felt really bad about it.

We ate broccoli red pepper soup with cheddar cheese for dinner when we got home. I created some garlic, red pepper and onion crackers to go along with it. New favorite cracker and so easy to make.


Tuesday, January 29

Red Hats and Pink Dinner

{What we did Monday}


Much better shopping trip today. He did have fun throwing his snack container on the floor multiple times to watch me pick it up. Andrew loves watching the cashier. He kept saying, "Hi." I think she had fun talking to him while working. As we were about to leave, the man behind us came up to us and said, "He is so beautiful!" I think grocery shopping with a baby makes it all the more fun :) {It might be a different story with 2 or 3 kids, but we'll see.}


He was a major poop meister today. As you can see, he took out his wipes and diapers, just in time for the third changing!


As I was organizing our documents/receipts/etc., he came up to me and tried putting a hat on my head. He had the right idea, but still needed some help.


Lemon juice + processed strawberries = strawberry lemonade! 


And how beautiful it is, too. I love the natural color gradient it formed. This was taken before adding the water and stevia. Not bad for the first time making it, only I'll prefer it a little sweeter next time. 



For dinner, we had salmon scampi on brown rice pasta. It was very similar to the chicken scampi recipe I usually make, but it included Italian-seasoned sprouted bread crumbs. Tasty :)


He loved this salmon dinner--haha.



I loved all the pink! Valentine's Day spirit mood maybe? But do you see anything missing though? Something felt so wrong while eating dinner, and then I realized I forgot to make a vegetable!

Baby is 17 Months; Minestrone Soup

{What we did Sunday}

Baby turned seventeen months today! Here are some updates:

1. He can climb onto our bed from the floor...that's a long ways up! 
2. He can put in the password for my iphone
3. He says "wow"
4. He eats solid foods for breakfast, lunch and dinner now (snacks in between, of course)
5. He kisses
6. He climbs on anything that's possible to climb on

Dad Andrew woke up feeling sick, so he stayed home from church and rested for a couple hours. He felt better halfway through the day though.


We chopped up lots of vegetables and chicken sausage after church


We had minestrone soup


Then we went to grandma and grandpa Perron's house for a little while. They had tacos for dinner, and Andrew had some, too. I was way too full after eating three bowls of soup! Baby made it up and down the stairs on his own at least three times. It's his favorite thing to do over there!


Andrew was fascinated with this flash light.


We watched the Piano Guys music videos. Baby never gets tired of them :)

Funny tickling, foot rubbing and loving their new couch. Val and Mom are looking up recipes and craft ideas on Pinterest. I'm thinking that corner of the couch will become the Pinterest corner, lol.

Spending Time Together

{What we did Saturday}

This past Saturday was full of life in our little apartment. We spent the entire day together; didn't go anywhere. But we got a lot done, played card games, played with baby, and experienced one of those long marital arguments that turns into a good thing because you learn from your mistakes and are determined to choose the hard path {and grow in your marriage} rather choose the easy route {and give up on it}.


My favorite part of making breakfast is putting eggs in the processor! They get so foamy and cook so evenly and fluffy! It took me long enough to learn to cook eggs over medium-low heat, otherwise they burn easily over medium heat. Makes the skillet much easier to clean, too. The things you learn...



We had our usual breakfast...scrambled eggs with spinach and onions...

 
Baby does not like when his dad traps him! It sure is funny to watch though :)

Friday, January 25

Such An Off Day

Friday is here! It wasn't anything special though. I actually wasn't as productive as I could have been. The motivation just wasn't there. I think the day was just "off" for us. Andrew left for work without his phone. I did no organizing or cleaning whatsoever, unless you count starting the dishwasher and sweeping the kitchen floor. Baby and I finished off our mint chocolate brownies with our breakfast. So awful! I woke up craving sweets. That never happens. Baby's morning nap was short, and he refused his early evening nap. There was plenty of baby chasing today, so the workouts got in :)

I read more of the book Colossians in my bible while he took his nap. Afterward, I got some interesting symptoms. Turned out I was really dehydrated. Hadn't had any water all day until 3 pm--mainly because we ran out of store-bought filtered water, and after learning about the chlorine and other bad contaminates found in tap water, I chose no water at all. Probably not the best choice. So I boiled 6 quarts of water for 20 minutes to kill the chlorine and drank a bunch of it. Terrible taste but dehydration symptoms gone :)

Andrew came home with the water, but feeling a little sick (he never gets sick!) and we're hoping good sleep will get him back to normal. We ate a beef vegetable stir fry with homemade teriyaki sauce for dinner, then we watched Beauty and the Beast. Goodnight!










Me and Baby, Day #4

{What we did Thursday}

Our final day on our own!

Actually, this week hasn't been bad at all. I've enjoyed spending the day with baby and vising people throughout the week, cooking, baking, and organizing/downsizing. After thinking about it, maybe I could make it as a military wife. I think so. I'd rather not be though :)

 
Our lunch was broccoli lentil soup.
 

I couldn't resist making double dark chocolate mint brownies...but I shared most of it :)

Andrew got in around 9:15 pm! He was more than happy to be home and see us :) We all layed down in bed and fell asleep. Baby went to bed without nursing. That's a first! He was majorly worn out...
